黑糖姜汁番薯芋圆糖水 (Sweet Potato Balls Ginger dessert)

I love chewy dessert and one of my favorite is Snowflakes' best seller, which consists of super chewy taro balls and sweet potato balls. I have done some research and customize the easiest way to make the hot version of sweet potato balls ginger dessert.

Ingredients:
- 180g Sweet potatoes
- 2 black sugar ginger cubes 
- 2 teaspoon of brown sugar
- 60g tapioca starch
- 30ml water
- Chinese wolfberry
- Red dates
- Ice

10 Steps Guide:

1. Cut the sweet potatoes into cubes.

2. Steam it for 20 - 30 minutes until its soft.

3. After that mash the sweet potatoes with a fork. Add-on two teaspoons of brown sugar while its hot so that it will melt. You may reduce the sugar based on your preference. Then, weigh the sweet potatoes.

4. Mix it with tapioca starch. The proportion should be 3 (sweet potato):1 (tapioca starch). In my case, my sweet potatoes are 180g so I mix it with 60g of tapioca starch. Excellent tip shared by my kawan.

5. Mix it with water bits by bit while you knead the dough. I added on 20ml of water, kneaded the dough and add-on another 10ml of water as I knead. The dough is ready when it does not stick to your hand.

Note: Adding too much water will result in non-chewy sweet potato balls!

6. Then, roll the dough into one long row and cut it into small square size. Round the edges to make it pretty. 

7. Put in the sweet potatoes balls in the boiling water. Once all the sweet potato balls start floating up, they are ready!

8. Drain the sweet potato balls and run it through water. Then put it in cold/ice water. 


7. Wash and slice the red dates, ginger and chinese wolfberry. 

8. Boil a pot of water with two black sugar ginger cubes.

9. Add-on the sliced red dates, ginger and chinese wolfberry.

10. Add-on the sweet potato balls 5-10 minutes before you want to serve. 

Try it out! It's a lot easier than it sounds. :D

Crepe

I was planning to make pancake but realize that I had no baking soda. So, I decided to make crepe instead. 

The ingredients that you will need:-
  • 1 cup of flour (150 grams)
  • 2 beaten eggs
  • 1 cup of milk (250 grams)
  • 3 tablespoons of melted butter
  • 1/4 tablespoon of salt
  • 1 tablespoon of sugar
Cooking in action...

Step 1-5: Sift 150 grams of flour. Beat two eggs with a fork. Prepare 250 grams of milk and 1/4 tablespoon of salt. Melt 3 tablespoons of butter together with 1 tablespoon of sugar.


Step 6: Mix all the ingredients together from Step 1-5. The crepe batter should be a smooth and watery in a light custard yellow colour. To avoid lumps in your crepe batter, you can sift the batter again. 

Step 7: Heat up your non-stick pan and coat it with a little bit of butter before pouring in a thin layer of crepe batter. Make sure it is balanced and covers the whole pan.

Step 8-9: Cook the crepe until golden brown and flip it quickly to avoid it being over-cooked.

Step 10: Then, you can put fillings that you like (for example, banana, honey, etc) in the middle of the crepe. 

Step 11: Finally, roll your crepe and it is ready to be consumed!

Cola Chicken

Holiday seems to pass by rather quickly :( 
But its good to meet the kawans today :)


Everyone should have a dish where they can show off of. Today, Rojak-lah will teach you how to a cook delicious dish in three simple steps. The menu of the day is.... *drum rolls* Cola Chicken!

The ingredients that you will need:-



  • 4 chicken wings & 16 small drumlets
  • 1 big onion OR 2 small onions
  • 3 cloves of garlic
  • 2 table spoons of dark soy sauce
  • 3 table spoons of light soy sauce
  • Some spring onions (optional)
  • A pinch of salt
  • 1 bottle of cola OR 1 can of cola

Cooking in action.....


Step 1: Pour in some coke. Put in chicken wings & drumlets, half of one big onion, three cloves of smashed and sliced garlic, 2 table spoons of dark soy sauce (for darker colour), 3 table spoons of light soy sauce, and a pinch of salt. It will be fine as long as the cola covers the chickens. 

Step 2: Stir the chicken every once a while to avoid it from sticking into your pan. The cooking will take around 45 minutes to an hour depending on how much cola you poured earlier. 


Step 3: When the sauce is drying up, you can add in the remaining half of the onion and spring onion. 

Then, proceed to serve! 

The picture doesn't do justice of the taste. I didn't arrange it nicely for the "photoshoot" because I was too hungry. You can also customize the ingredients accordingly. I decided to put in spring onions this round because there's lack of green in the dish.
